Spicy Black Beans, Rice and Plantains.


Alrighty now, so I promised everyone over in Facebook land that I would put this recipe up on my blog so here goes...

Spicy Black Beans, Rice & Plantains

Ingredients

For Beans:
2 Cans of Black Beans
1 Clove of Garlic
1/2 Medium Tomato
1 Jalapeno
Sea Salt to Taste
Oil


For Plantains:
2 Ripe Plantains
Extra Virgin Olive Oil or Virgin Coconut Oil
All of the Following to Taste:
Coconut Palm Sugar
Sea Salt
Cinnamon

Cooked Rice (Brown or White)

Optional:
Lime or Mandarin Orange
Cilantro (Course Chopped)

Directions:

Put rice on to cook first, while rice is cooking, chop up garlic, then jalapeno into small bits, then roughly cut tomato to bring out juices while cutting. Heat pan with oil add in garlic, then jalapeno and the tomato, saute' for few moments. While cooking open up canned beans and put them in a medium size cooking pot (don't not drain liquid) and add the garlic, jalapeno and tomato mixture to the beans and some salt to taste, cook on medium until heated through.

Next it's time to grill the plantains on a grill plate or BBQ or grill. I always use my grill plate when cooking them. Cut ends off plantain, then cut in half, rub the cut half with oil, then sprinkle with coconut palm sugar, sea salt and cinnamon (the yummy goodies), do this to all of the halves (leave on the skin). Heat grill plate, put plantain cut side down, if you are using a grill plate you can peel skin off now and sprinkle with the yummy goodies that are mentioned above on the other side, put a lid on it and cook for about 10 to 12 minutes on one side after that and turn over and cook for another 10 to 12 minutes. If using a grill or BBQ cut in half, sprinkle with the yummy goodies mentioned above and leave skin on cook for 15 minutes, cut side down and covered, turn after 15 minutes so it is skin side down and cook for another 15 minutes.

When everything is done cooking plate it...rice with spicy, juicy beans on top and plantains sliced on the side. If you would like to add fresh cilantro to the beans, add it now and then cut your lime or mandarin in half and squeeze over everything.
